I just got back from the gym and decided to have a salad for my post work out meal. I also have to get to work here soon and wanted to have something a bit more substantial than juice!
I decided to just wing a dressing and threw a bunch of ingredients in a blender and WOW! It was so amazing I had to write it down immediately. These ingredients were not measured out so I don't know exact measurements BUT it will be close enough to play around with!
Ingredients:
3 Organic Vine tomatoes
1 1/2 Handfuls Fresh Basil
1 tbsp fresh rosemary
1/4 cup Raw cashews
Tiny splash olive oil (helps bind)
Dash of himalayan sea salt
2 tbsp Nutritional yeast
Splash of apple cider vinegar
Blend all the ingredients together until rich and creamy. It was amazing! I topped off the salad with some Raw hemp seeds and cracked pepper!
It was delicious!
